Cannubi by Umberto Bombana at the newly reimagined Dusit Thani Bangkok has earned one Michelin star in The Michelin Guide Thailand 2026, becoming the first Italian restaurant in the country to receive the distinction.
The recognition marks an important moment for Bangkok’s dining scene and for Dusit Thani Bangkok, which reopened earlier this year following a major transformation. At the heart of Cannubi is the culinary philosophy of Umberto Bombana, the Italian chef best known for 8½ Otto e Mezzo Bombana in Hong Kong—the only Italian restaurant outside Italy to hold three Michelin stars.

Rather than trying to reinvent Italian cuisine, Cannubi stays close to its roots. The menu focuses on seasonal produce, carefully sourced ingredients, and classic flavours refined with a light, modern touch. In Bangkok, Bombana’s approach is carried forward by Executive Italian Chef Andrea Susto, his longtime protégé, who leads the kitchen day to day.

Guests can choose from à la carte dishes, tasting menus, and a set lunch, alongside a white truffle menu that reflects Bombana’s long-standing reputation as The King of White Truffles. The wine list, with more than 350 labels, leans toward heritage producers and well-established regions, designed to complement the food rather than overwhelm it.
Ambience Is Everything

The restaurant’s setting is just as considered as the menu. Located on the lobby level, Cannubi looks out onto Dusit Thani Bangkok’s striking nine-storey waterfall. Inside, the main dining room features restored golden teakwood panels salvaged from the original hotel’s Benjarong restaurant—an understated nod to the site’s history. Warm lighting, soft lines, and a pair of private dining rooms create a space that feels elegant without being overly formal.

“For me, this restaurant is about honesty and respect—for ingredients, for tradition, and for the people who bring it to life,” said Chef Umberto Bombana. “To receive a Michelin star in Bangkok, and to be the first Italian restaurant in Thailand to do so, is incredibly meaningful. I’m proud of Chef Andrea and the entire team.”
With its first Michelin star, Cannubi quietly establishes itself as a serious destination for Italian dining in the city—without losing sight of what matters most: good food, done well.
