Set against the tranquil backdrop of Banyan Tree Krabi, an intimate dining experience is taking shape this April. Hosted at the resort’s signature restaurant, Saffron, the “Four-Hands Masterpiece” dinner will unfold over two evenings on 23 and 24 April 2026.

The collaboration in Krabi brings together Thai Sous Chef Koranat Wiwatthanachot and visiting chef Renu Homsombat, whose culinary journeys converge in a menu that draws from both heritage and modern interpretation.

At the heart of the experience is a shared philosophy: to honour authentic Thai flavours while presenting them in a contemporary way. Ingredients sourced from Thailand’s land and sea shape the narrative of the evening, with each dish reflecting a sense of place.

Chef Renu, currently Executive Chef at Hotel Vereina, brings with her a global perspective shaped by years of experience, including collaborations with acclaimed establishments such as the Schwarzwaldstube Restaurant. Alongside Chef Day, the duo offers a thoughtful interpretation of Thai cuisine that feels both familiar and elevated.

A Five-Course Journey

The evening unfolds as a curated five-course menu, beginning with an amuse-bouche crafted by both chefs. Highlights include steamed rice dumplings with aromatic crab curry, followed by the comforting depth of tom kha yum goong.

For the main course, guests can choose between grilled red snapper or duck breast in Thai red coconut curry—each dish balancing richness with layered spice. The experience is rounded off with refreshing sorbets and a choice of dessert, including delicate citrus notes inspired by local ingredients.

Priced at THB 2,900 per person, or THB 4,900 with wine pairings featuring selections from Monsoon Valley, the dinner is designed as a relaxed yet refined evening. With limited seating across just two nights, it offers a more personal way to experience Saffron’s culinary identity.
