Park Hyatt Kuala Lumpur will mark Malaysia Day with A Baba Nyonya Story: Recipes of a Living Heritage, a week-long dining collaboration with chef Sharon De Souza at Park Lounge this September.

Born in Malacca and of Kristang and Baba Nyonya heritage, De Souza is the chef behind Kuala Lumpur’s Nyonya Supper Club. A former banker who turned to cooking later in life, she developed her supper club around the preservation of family recipes passed down through generations.

Her approach remains closely tied to traditional techniques, including grinding rempah by hand and sourcing specific ingredients used in recipes from her mother and grandmother. For the Park Lounge collaboration, she brings a selection of these dishes to the hotel, offering a personal interpretation of Baba Nyonya cuisine and its place within Malaysia’s culinary heritage.

The menu includes Nasi Ulam, combining finely sliced herbs with toasted coconut, dried shrimp, salted fish and sambal belacan. Daging Tulang Rusuk Kapitan features slow-braised beef short rib cooked with ground spices, coconut cream and lime.

Also on the menu is Nyonya Laksa, served with rock lobster and vermicelli in a coconut curry broth with quail egg, laksa leaves and calamansi. Kuah Lada pairs golden snapper simmered with tamarind, turmeric and black peppercorns with Chinese doughnuts for soaking up the gravy.

Beyond the dishes themselves, the collaboration focuses on the stories and family traditions behind them. De Souza’s recipes reflect a style of cooking shaped by Malacca’s multicultural heritage and the continued practice of preparing, sharing and preserving food within the family.

A Baba Nyonya Story: Recipes of a Living Heritage will be presented at Park Lounge, Park Hyatt Kuala Lumpur, from 14 to 20 September 2026 as part of the hotel’s Malaysia Day celebrations.
