EQ Kuala Lumpur will welcome Michelin-starred chef Charles Coulombeau to its rooftop restaurant Sabayon for a seven-night dining residency from 23 to 29 July 2026.

The French chef, whose restaurants La Maison dans le Parc in Nancy and Yozora in Metz have both been recognised by the Michelin Guide, will present an exclusive five-course dinner showcasing his signature style, which blends classical French techniques with Japanese influences and seasonal ingredients.

Created specially for the residency, the menu begins with avocado, sake and pear before progressing through dishes including lamb with lime and tarragon, hamachi with cucumber and coriander, tamagoyaki with caviar and yuzu, scallops with carrots and nori, and duck paired with sushi rice and blackberries.

Dessert concludes the experience with combinations of orange blossom, passion fruit and jalapeño, followed by nougat with Bergamot de Nancy, inspired by the chef’s hometown in northeastern France.

Guests can also opt for a curated five-glass wine pairing or a premium wine pairing designed to complement each course.

Held on Level 51 of EQ Kuala Lumpur, Sabayon has established itself as one of the city’s leading fine dining destinations, receiving the Wine Spectator Best of Award of Excellence annually since 2020. The residency continues the restaurant’s programme of hosting internationally recognised chefs for limited engagements in Kuala Lumpur.

Chef Charles Coulombeau’s five-course dinner will be available for seven nights only, priced at RM788+ per person. Optional five-glass wine pairings are available from RM288+, while the premium pairing is priced at RM488+.
