Waldorf Astoria Sydney has announced a partnership with Australian chef Curtis Stone, who will lead the culinary programme at the luxury hotel’s debut in Australia.

The Melbourne-born chef will create two original dining concepts exclusively for the property, including what will be his first restaurant in Australia. The venues are expected to showcase seasonal Australian produce and local culinary traditions through the lens of Waldorf Astoria’s hospitality heritage.

Located on Sydney Harbour and developed by Fiveight, Waldorf Astoria Sydney will mark the luxury brand’s first hotel in Australia. Stone’s appointment forms part of the property’s focus on destination dining, a hallmark of the Waldorf Astoria brand.

Best known for his restaurants in the United States and international television career, Stone said the project draws inspiration from Australia’s producers, seasonal ingredients and hospitality culture, making it a significant milestone in his career.

The collaboration continues Waldorf Astoria’s long-standing association with acclaimed chefs around the world. Across its global portfolio, the brand is home to a number of Michelin-starred restaurants and chef-led dining concepts, including collaborations with Heinz Beck, Gordon Ramsay, Daisuke Nakazawa, Dave Pynt, Clare Smyth, Daniel Boulud and Jean-Georges Vongerichten.

The Sydney opening adds to a broader pipeline of Waldorf Astoria properties, including upcoming hotels in Kuala Lumpur, Bali and London, many of which will feature signature restaurants led by internationally recognised chefs.
