EQ Hotel continues to redefine the culinary scene with the upcoming guest residency of two Michelin star chef Alex Dilling at its fine dining restaurant, Sabayon. Dilling, the Chef Patron of Alex Dilling at Hotel Café Royal in London, brings his expertise in French gastronomy to Malaysia in KL from 4 to 15 June 2024.
Earning His Stars
Dilling’s London restaurant, an intimate 34-seat dining room, earned two Michelin stars in 2023, just seven months after opening, and it is now ranked 14th in the Top 100 Restaurants in the UK. His culinary journey began under legends like Alain Ducasse, Didier Elena, and Tony Esnault at Adour in New York, which garnered three Michelin stars in 2008 and two in 2009 respectively.
As Chef De Cuisine at New York’s Caviar Russe, Dilling earned a Michelin star in 2013, cementing his love for caviar, a staple in his menus. Returning to London, he joined Hélène Darroze at The Connaught, maintaining its two Michelin stars and overseeing global events. 
Welcome To Malaysia
As Executive Chef of The Greenhouse in Mayfair from 2018 to 2021, Dilling became known as one of the world’s top culinary talents. For gourmands, Dlling’s stint at Sabayon is not just a first for Malaysians but his first showcase in the country as well.
On top of that, the EQ x Alex Dilling event will feature an exclusive collaboration with Barons de Rothschild, offering their Rare Collection Blanc de Blancs 2012, complete with a bespoke presentation box celebrating EQ’s 50th anniversary.
The Must Trys
The event will offer two exquisite menus, including a vegetarian option. Highlights include aged Kaluga caviar with rillettes, wild mushroom macaroni gratin with 36-month aged parmesan and black truffles, olive oil poached black cod with smoked eel consommé, hunter chicken, and a sourdough ice cream with Pedro Ximenes sabayon.
The EQ x Alex Dilling experience is priced at RM1,200+ per person for dinner, with the vegetarian menu available at RM850+.
